Beautiful loaves! So true that retarding can be a trusty friend to good bread and to home bakers with busy schedules. (And now there is a certain Rolling Stones song playing in my head...)

Impressive loaves, and I have a question. Is "baking off" the bread some professional baker-speak? A regional idiom? I've never heard it before, but I notice that you seem to recurrently. Just wondering...

Good question on the term "baking off." I'm not sure if I heard someone say it previously but maybe so. Anyone else want to weigh in?
